The idea

One counter, four culinary worlds — cooked in front of you.

From the tandoors of the north of India to the steam baskets of Guangzhou, the robata of Japan and the wok fire of Bangkok — Spices gathers Asia's great kitchens on a single terrace, five hundred metres above Lake Lucerne.

Peking Duck, the whole ceremony

Roasted over fruit-wood for lacquered, glass-thin skin, wheeled to your table and carved by hand. First the crackling skin with sugar and caviar; then the meat in warm pancakes with cucumber, leek and our house hoisin.

The Orchard in Mist

Our tableside finale: yuzu and white chocolate frozen in nitrogen and lifted on a cloud of cold smoke, crowned with a single orchid. Theatre you can eat — and the last thing our guests forget.
